The problem is that the timer function is NOT tied to any kind of safety protection feature. Ice cream mixtures vary greatly on how long they take to freeze. As the mixture freezes, the mixing paddle slows down. When it comes to a stop, it's a very good idea to shut the motor off so it doesn't overheat the motor coils in the mixing motor (that sits on top here). However, you can't expect someone to sit there and watch it the entire time. That's why it has a timer. It defaults to an hour. I set it for 50 minutes which was about how long it took for most of my batches (45-50 minutes, a few were over an hour). The only thing I had varied was using egg yolks instead of glycerin in a recipe I had been using repeatedly. Apparently, this was enough to greatly vary the freezing time on this batch as I came in to check on it at 48 minutes and the machine had already...
